Try adding some cod liver oil to her food. Its rich in omega fatty acids, which is AWESOME for her skin and coat.
References :
Hey you need to get a couple of humidifiers, and make sure that they are in a room were the animal is most often. Also, avoid giving a dog a bath. There pet hair is an oil, that helps keep out things that make them itch.
References :
I used Malaseb dog shampoo prescribed from the vet and oatmeal shampoo with conditioner. Tomilyn Milk bath for dogs and cats, which you can buy at Petco is the best over the counter shampoo to use as well.

Ask your vet for treatment of dry skin. It may due to the winter months.

For eating, Eukanuba dog food for sensitive skin and nutro (wet food) is also a great source of nutrition for your dog. Fish oil capsules are also a great supplement for your dog, but it may make them smell.

Sensitive baby shampoo works just as good too.
References :
If she's itching, she has allergies. How long has this been going on? Have you changed detergents, sheets, or bedding recently? It might be environmental. What food do you feed her? A lot of dogs tend to be allergic to grains and certain proteins like chicken. You can do a food elimination diet or take her to a vet to get an allergy test done. Avoid any food brands that contain corn, corn gluten meal, by-products, food coloring, nasty preservatives, and things you can't pronounce. The first few ingredients should be meat or meat meal (i.e. chicken, turkey meal, etc). Make sure there aren't too many grains (i.e. wheat, barley, oats, whatever) in the ingredient list.

Some great foods are:
Canidae
Wellness
Nature's Variety
Orijen
Solid Gold
Timberwolf Organics
Innova
Innova EVO
California Natural
Taste of the Wild

ETA
You're not limited to just egg whites. Whole eggs are completely fine. I feed my dog 2 raw eggs a week.

ETA2
I'd avoid cod liver oil. It's extremely rich in vitamin A and it's easy to overdose, which can be dangerous. Stick to pure fish oil such as salmon oil.
References :
Skin and coat issues are often related to food allergies--re-evaluate what you're feeding her and (gradually of course) switch to a higher quality food if necessary. Also, look for sensitive skin and/or oatmeal formula dog shampoos to help alleviate irritation and itching.
References :
Feed her egg whites. It sounds gross but it works, it will also make her coat shiny.
